Jairo Arcila - proprietor of his farm, Santa Monica - has taken 100% Washed Yellow Sudan Rume, an endangered variety grown by fewer than 10 farms worldwide, and truly brought forth its rare beauty. A truly unique cup that’s hard to come by often.

Jairo is a third-generation coffee farmer from Quindío, Colombia. Married to Luz Helena Salazar and father to Carlos and Felipe Arcila. Carlos and Felipe are cofounders of our exporting partner for this particular coffee, Cofinet.

While surprising in its results, the overall processing for this coffee is relatively simple. An anaerobic preferment, a de-pulping, and a traditional raised bed dry. The magic comes in when the fruit esters penetrate the cell walls of the coffee, infusing it with uncanny fruit flavors, in this case blackberry.
